Chocolate Chip Cookies (The World’s best, I reckon)

Hi All!

I’ve been a bit of a cookie monster lately, experimenting with all kinds of recipes in order to yield the perfect chocolate chip cookie.

I’ve been making cookies for as long as I can remember – they are one of my favourite things to bake. They’ve not always been successful however! Until last year, I struggled to find a recipe or method that resulted in my ideal chocolate chip cookie.

Personally, I think that the perfect cookie is one that is golden brown and completely sunken, with a slightly crunchy outer edge and a chewy centre, packed with chocolate chips (dark and white).

This recipe delivers¬†just that and more with the addition of browned butter (i’ll explain below) to make a crunchy, gooey and chewy cookie that will make you wonder why you didn’t come across it years ago!

Four layer Chocolate Orange Cake

It’s that time of year… it’s getting a little bit colder, darker and cosier. Autumn and Winter are probably my favourite seasons of the year. I really love any excuse to be festive and with Halloween and (dare I say it?) Christmas around the corner, its the perfect time to start experimenting with new flavours and different recipes. I trialled this chocolate orange cake recipe last weekend – a deliciously soft, chocolatey sponge sandwiched with layers of tangy orange buttercream icing.

Summer Strawberry and Basil Cupcakes

Hello! I’m back! I am sorry for the long hiatus… i’ve been so busy with work and home life, that I haven’t had a chance to do any baking! Or at least any baking that is blog-worthy. ūüôā

Anyway, last night I couldn’t sleep as I listened to the rain banging against the window of my bedroom… I kept thinking ‘it’s still¬†August,¬†right?!’. While this is typical of an irish summer, I’m just not quite ready to accept that the sun is going down a little earlier, the rain is getting a little more frequent (and heavy) and it’s even starting to get a little chilly!

So, in an attempt to keep the summer around a little bit longer… here’s a delicious, fresh, and sweet summery recipe that I hope you’ll enjoy.

An American classic: Whoopie Pies!

Whoopie Pies are not exactly something you hear of everyday and even when you do, they don’t sound particularly appealing! I promise you though, this American treat (Fact: they are official state ‘treat’ of Maine, not to be confused with the official state dessert, which is blueberry pie!) is worth all of the effort.

These soft and fluffy half-cake-half-biscuit creations originated in New England and are a Pennsylvania Amish tradition. They consist of two baked rounds, commonly flavoured with cocoa, sandwiched together with a marshmallow ‘fluff’ or cream filling.

I decided that I wanted to try my hand at creating my very own whoopie pie recipe, so I spent a couple of hours googling to find the perfect combination of ingredients.

I came across two great recipes for whoopie pies, one from the guys at Sorted Food for vanilla whoopie pies and one from my favourite, Cupcake Jemma, who created this simple to follow video on how to make the classic whoopie pie.

Using a combination of these recipes and a few ideas of my own I came up with these – vanilla whoopie pies with lemon mascarpone cream and fresh raspberries.
